In preparation for our soul-warming Ratatouille, we ordered this wholesome goodness in a box that was delivered the day after we placed our order. Yes, you heard that right. Scout’s Ratatouille With Pesto Pockets, Feta & Parmesan

Pesto Ingredients

  • 1 large bunch of basil leaves

  • 1 garlic clove crushed

  • ½ cup pine nuts (toasted)

  • ½ cup grated parmesan

  • 1/2 cup olive oil

  • salt & pepper to taste

Pita Pockets

  • 8 pita pockets cut into ¼’s

  • 250g danish feta

  • 150g shaved parmesan

Ratatouille Ingredients

  • 2 tablespoons of olive oil

  • 2 garlic cloves crushed

  • 2 red onion quartered

  • 1 large eggplant diced into 2cm cubes

  • 3 zucchini sliced

  • 2 red capsicum diced into 2cm cubes

  • 3 carrots sliced 

  • 3 squash cut into ¼’s

  • 800g tin of tomatoes

  • 1 teaspoon of sugar

Instructions

1. SAUTE´ onion and garlic in oil for 3 minutes or until translucent.

2. Add all remaining vegetables and COOK for a further 7 minutes.

3. Pour in the tin of tomatoes and sugar. SIMMER for a further 10 minutes with the lid on. 

4. SEASON w/ salt and pepper.

While the ratatouille is cooking, make the pesto pockets.

5. TOAST pine nuts until lightly browned.

6. Place basil, garlic, pine nuts, parmesan and olive oil in a blender or food processor to COMBINE. Blend until the pesto forms a spreadable consistency. Add more oil as you go if necessary.

7. SEASON with salt and pepper. 

8. CUT pita pockets into quarters and spread approximately 1 teaspoon of pesto inside each quarter.

9. Arrange on a lined baking tray and TOP with crumbled feta and parmesan. 

10. GRILL until toasted and cheese melted.

11. SERVE immediately w/ Ratatouille.

Serves 4 - 6 people
